Spinach Chicken

















Made some Indian food!

1/2 bag of spinach
2 green chillies chopped
1 tablespoon oil
3 bay leaves
4 green cardamoms
2 cinnamon sticks
1 1/2 onion chopped
1 tablespoon garlic
2 teaspoons ginger
1 tomato chopped
3 chicken breasts
4 tablespoons yoghurt
2 teaspoons cumin/coriander powder mix
1 teaspoon chili powder
1 teaspoon pav bhaji mix
salt to taste

Note:
For the last three ingredients, you can substitute 2 teaspoons of garam masala mix
I like garlic so I put in a lot of garlic.

  1. Cut off stems and rinse spinach. Cook in boiling salted water for 2 minutes. Drain and refresh in cold water. Puree in a blender with green chillies and half of an onion.
  2. Heat oil in pan and fry the bay leaves, cardamoms and cinnamon until aromatic. Add until. Cook until onions are slightly golden.
  3. Add the ginger and garlic.
  4. Add tomatoes and fry for about 3 minutes.
  5. Add chicken. Mix well. Cook until chicken is white.
  6. Stir in the spinach puree. Cook until chicken is tender.
  7. Stir in the yogurt and the rest of ingredients (or garam masala). Add salt to taste. Simmer for about 3 minutes.
  8. Ready to eat! It tastes great with some rice!

Oatmeal Chocolate Chip

I've been searching for a good relatively healthy, chewy oatmeal chocolate chip cookie recipe forever and I think I've finally gotten the right combination to work!

Ingredients:
1 cup unsweetened apple sauce [butter substitute]
3/4 cup brown sugar
3/4 cup sugar (splenda)
2 eggs
2 tsp. vanilla extract
1 cup flour
1/2 tsp. baking soda
3/4 tsp. salt
2 1/2 cup oats
1 1/4 cup semi-sweet chocolate chips



















Directions:
  1. Preheat oven to 350 F.
  2. Mix applesauce, sugar, and brown sugar. Beat in the eggs. Mix in vanilla.
  3. In separate bowl, mix flour, salt, and baking soda. Mix into creamed mixture.
  4. Mix in oats and chocolate chips.
  5. Place spoonfuls onto un-greased baking sheet. These do not flatten out while cooking so shape them accordingly.
  6. Cook for about 10 minutes. Let cool and enjoy!

I've been meaning to create a food blog for years but have never gotten around to it. So what better time to create a food blog than when I'm trying to procrastinate from doing work?


Most of the recipes I use are combinations of multiple recipes and my personal taste.  The words in parenthesis are the exact type of ingredient I used.

French Toast

Ingredients:
1/2 cup milk

3 egg whites

1/2 tsp. cinnamon

2 tsp. sugar (splenda)

1 tsp. vanilla extract

6 slices of bread (wheat)

oil (canola)


Optional Ingredients:

Fruit (Cherries, Blueberries)


















































Directions:

1. Mix all ingredients except bread and oil.
2. Soak bread in mixture.
3. Heat pan to about medium heat. Add desire amount of oil.
4. Cook bread in pan until slightly golden brown.
5. Add fruit if desired.
6. Eat while warm!
