Spring Dinner Menu

Shiitake Mushroom and Ginger soup
  •     Instead of using water and chicken, I used 3 cups of chicken stock
Salad 
  •       Mixed greens with cherry tomatoes and feta

  •       I doubled the marinade recipe and used different veggies

  •        Don't have a picture of the mousse but it was rich and decadent! Yum!

Chicken Pot Pie



Crust (makes bottom and top layer)
3 c. flour
8 tblsp. (1 stick) butter cut in small pieces and kept cold
1 1/4 c. cold water

Mix flour and butter until crumbles form.  Mix in water to form dough.  Refrigerate for at least 2 hours.


1/4 cup olive oil
1/3 cup flour
1 cup chicken broth
2 cups milk 
3/4 tsp salt
1/2 tsp pepper 
1 tsp. red pepper
1 tsp. garlic powder
3 cups mixed vegetables
2 cups cooked, cubed chicken 
Cheese (optional)
1 egg white whisked


1. Preheat oven to 375 F. Heat oil and sift in flour slowly to form paste.  Add in broth and milk, mix and keep stirring.  Add in vegetables, chicken and spices.  Simmer while making dough.
2. Separate dough into two lumps.  One for bottom layer and one for top.  Grease bottom of 9 inch pan.  Place one layer in pan.  Brush whisked egg on top.  Place in oven for 5 minutes.
3. Remove pan from oven. Pour in filling.  Sprinkle cheese on top if desired.  Place top dough layer.  Cut in design on top layer.  Brush rest of whisked egg on top layer.
4. Bake for 45 minutes to 1 hour.

Cinnamon Rolls

I've wanted to make cinnamon rolls forever!  The recipe used is found here.  Best part of this recipe? No yeast!  Next time I make these, I'm going to hold the cardamon and just add more cinnamon.  But otherwise a great recipe!

Kahlua Coffee Mousse Layer Cake

This cake is this chocolate cake recipe with Kahlua.  The Mousse was made with whipped cream, instant coffee, vanilla extract and powdered sugar.  Top layer of icing is chocolate butter cream.

Football Cake Balls

Used leftover cake and crumbled it (any cake will do).  Mixed in icing (pick your favorite icing).  I don't think I had any icing so I mixed cream cheese, vanilla extract and sugar together.  Shape into footballs.  Freeze for 10-15 minutes.  Dip in chocolate. Use white chocolate to draw the stripes.

Great and easy Superbowl recipe!

Fried Mac & Cheese

Recipe

I used Paula Deen's recipe for the breading part.  Use your favorite mac & cheese recipe for the mac & cheese.  Remember to chill the mac & cheese overnight before frying!!!

Cookie Dough Cake

Same as the marble cake, just dressed up differently.  I don't have a picture of the inside of this cake either.  There's a cookie dough layer in between the two layers.

Icing is just whipped cream with sugar and vanilla.

For the white cake, I replaced the milk with 3/4 c. cream.  Also, make sure to beat the eggs before mixing it with the rest of the ingredients.
